Champagne Heaven at The DoubleTree by Hilton – June 19, 2015

Champagne Heaven was our first cocktail style event which was held at The Penthouse Suite of The DoubleTree by Hilton Hotel in the Melbourne CBD.

We had a total of 55 people attend this very classy and formal event.

We started with the most breathtaking views of the heart of Melbourne’s dynamic central business district.

The river, the lights, the stunning skyline. Only the DoubleTree by Hilton could offer such incredible views, via floor-to-ceiling windows.

This was accompanied by an ultra-creative canapé menu that any top chef would be honoured to serve

We then perfectly paired that menu with an array of first-class champagnes — the likes you’ve never tasted before.

1) A sea-inspired dish unlike anything you’ve ever tasted.
Tasmanian Oysters w. Champagne Shallot Foam, Smoked Herring Roe and Chives.

All canapés prepared by executive chef Tony Moss, who obtained his Diploma in Professional Culinary arts in 2004, which included an internship at Heston Blumenthal’s The Fat Duck.
