Champagne Heaven at The DoubleTree by Hilton – June 19, 2015

Champagne Heaven was our first cocktail style event which was held at The Penthouse Suite of The DoubleTree by Hilton Hotel in the Melbourne CBD.

We had a total of 55 people attend this very classy and formal event.

We started with the most breathtaking views of the heart of Melbourne’s dynamic central business district.

The river, the lights, the stunning skyline. Only the DoubleTree by Hilton could offer such incredible views, via floor-to-ceiling windows.

This was accompanied by an ultra-creative canapé menu that any top chef would be honoured to serve

We then perfectly paired that menu with an array of first-class champagnes — the likes you’ve never tasted before.

Seven Inspiring Canapés — Each Perfectly Paired with an Award-Winning Champagne

1) A sea-inspired dish unlike anything you’ve ever tasted.
Tasmanian Oysters w. Champagne Shallot Foam, Smoked Herring Roe and Chives.
Briny, smoky, sweet, and pungent. Perfect.

Paired with:

A wine admired by France’s best restaurants. The epitome of finesse.
Champagne Blanc de Blancs, Diebolt-Vallois.
From magnificent vineyards come magnificent flavour.

2) More treasure from the sea. A chef-inspired canapé that delivers intense flavour.
Citrus and Hay Cured Yellowfin Tuna, Lemon Crème Fraiche, Poppyseeds, Brioche.
A flavour combination that dares to impress.

Paired with:

A vintage cuvee produced exclusively from Pinot Meunier and Pinot Noir.
Gosset Grande Reserve Brut NV.
Rich, complex, and complete.

3) As delicious as it is beautiful.
White Peach, Prosciutto, Pork Crackle, Pineapple and Kaffir Lime Salsa.
You will be in heaven from first bite forward.

Paired with:

Rests in the cellar for 6 years to develop complexity, intensity, and roundness on the palate.
2007 Champagne Ayala Blanc de Blanc
Lovely maturity on the nose, charming citrus and white flowers. A unique Vintage offering.

4) A chicken dish taken to a whole new level!
Almond Crusted Chicken Lollypop, Smoked Honey and White Truffle.
Whatever you’re expecting, exceed it times 10!

Paired with:

One of Champagne’s most consistent large brands.
NV Champagne Taittinger Grand Cru
Very crisp, great intensity, very fine bubbles. Long finish. Elegant throughout.

5) Creative bordering on a masterpiece.
Slow Cooked Hen Eggs, Shaved Pickled Asparagus, Gradano and Chilli Horseradish.
Savour every single morsel!

Paired with:

A star performer through and through.
Champagne Jacquesson 738
Ripe and spicy notes of 2010 in a wine that is fresh and long.

6) The ultimate indulgence!
Twice Cooked Hazelnut and Thyme Soufflé, Mozzarella, Marmalade.
Sweet, savoury, simply heaven.

Paired with:

Perfect and delicate flavour.
Champagne Napoleon Blanc de Blancs Brut
A full nose with great finesse, offering notes of citrus, candied peel and fresh hazelnuts.

7) The grand finale.
Caramelized Tart Au Citron, Earl Grey Granita.
A standing ovation may be well deserved.

Paired with:

Airy and delicate yet surprisingly long.

Intense and complex on the nose.

MHSOBA Winemaker Dinner Series

mhsoba

Melbourne High School Old Boys is a not-for-profit organisation.

Founded in 1907, its primary aim has always been the welfare of the school. Each year it grants scholarships and awards academic and general prizes for successful students. We are also instrumental in raising funds to assist the school on various building projects and help give the current students the best possible education. At every opportunity the association does what it can to uphold the school’s tradition and status in the community.
Each year we hold various events including 4 winemaker dinners to help raise funds for these projects. Since commencing these dinners, we have held 38 to date. The objective of the winemaker dinner is to interface excellent food with quality wines from a particular winemaker for the education and enjoyment of all our guests.
When selecting a winemaker for the dinner we are looking for a vineyard that can help with the following:

  • attend the dinner and speak about each wine accompanying the meal; one complimentary meal provided;
  • provide a variety of sparkling, white wine and red wine to accompany a 3 course dinner with canapés;
  • provide wine for consumption during the meal at $10 per bottle;
  • a capacity for guests to purchase wines at discount prices on the night;
  • arrangement of shipping if the wines cannot be taken on the night;
  • reimbursement to the MHSOBA of $2 per bottle for each bottle purchased on or following the evening with scope for marketing to members on our website for the following 12 months; and
  • 2 complimentary bottles of wine as part of the raffle on the night.

As a thank you for generosity, we would like to help promote your vineyard by using your logo on all email invitations for the dinner, on our website with a link to your web page and in our quarterly newsletter.
We look forward to working with you to make the next winemaker dinner a success.
Kind regards
