2004 Mons Rubra Methode Traditionelle Sparkling Pinot Noir (Macedon, VIC)

Tasting Notes:
100% pinot grapes grown from the ancient MV6 clone, this well balanced sparkling pinot is full bodied, creamy and rich and fills the palate with subtle layers of fruit.

Mons Rubra sparkling pinot noir has a perfect balance of the pinot noir grapes having been hand pressed and barrel aged in new French oak before tirage bottling and ageing on lees. It is an elegant, balanced and complex sparkling with a delicate flavour.  Intensely aromatic with notes of cherry and raspberries and followed up by an understated elegance which drives the fruit towards a long and lingering finish.

With stunningly fine beads and a delightfully smooth finish it has developed into a wine both fascinating and rare!

ENTREE:

Right from the start, you’re feasting like royalty! Succulent YELLOW FIN TUNA with AVOCADO, SPRING ONIONS, GINGER and SOY

2007 McLeish Estate Semillon (Hunter Valley, NSW)

Tasting Notes:

The Semillon colour shows off luminous greens.

With a distinctive Hunter lemongrass/straw aromas as a young wine.

The fruit/acid balance ensures a long length to distinct elegant finish, combined with lively lingering, generous palate.

Excellent acid structure, long flavours of lime and apple blossom.

Perfect in its youth and a wine that will bottle age gracefully.

2007 Bodegas Enguera Megala (Spain)

Tasting Notes:

The intense aroma is spicy fruit flavours of ripe red and dark berries.

The palate is concentrated with lots of ripe fruit.

Very smooth with good acidity.

Grippy, bitter, and chocolatey tannins that last a long time.

MAIN:

Luscious flavours that you’ll be talking about for days! WAGYU PORTERHOUSE (Marble score 7) with MISO & roasted garlic FRAICHE

Your third wine tasting is a fine Shiraz —

2006 Peregrine Ridge Limited Release Shiraz (Heathcote, VIC)

Tasting Notes:

In a class by itself.

Colour: Dark red to garnet with purple to garnet hue.

Nose: Spicy with hints of cinnamon and a touch of eucalypt and tart raspberries leading to dark cherries, blackberries, dark plums and mulberries.   There is an integrated mix of spice and savoury oak, with dark chocolate undertones.

Palate: Rich dark plums, dark cherries and blackberries dominate the palate, with superbly integrated oak providing the length and persistence that is the hallmark of this wine style.  The front palate provides a spicy introduction to a long and persistent after palate with developed, silky tannins and a dark chocolate finish.
This is a medium to full bodied wine.

1998 Riddoch Estate Shiraz (Coonawarra, SA)

Tasting Notes:

Medium red-purple; the bouquet has some spicy/leathery notes in varietal mode, the palate with pleasant, soft dark cherry and spicy fruit. Minimal oak.

2012 Passing Clouds “The Angel”

The Angel ’12 is the second vintage that has been made with 100% Cabernet sauvignon fruit.
Spending 18 months in French oak this Bordeaux style Cabernet shows great fruit intensity,
Medium red – purple colour, spicy blackcurrant aromas flow into the palate where the fruit meets well with the elegant tannin structure representative of the style.

2006 Pertaringa “Over The Top” Shiraz

(McLaren Vale, SA)

Tasting Notes:

Intense nose of mint and black pepper followed by distinctive Shiraz flavours, including blackberry and mulberry. A full flavoured style exhibiting luscious sweet berry fruit on the palate rounded off by hints of milk chocolate and under-scored by savoury notes. The oak used in this wine is well integrated, and fine silky tannins indicate the excellent cellaring capabilities of this wine.

2007 David Franz Alternative View “Pirate Strength” Shiraz (Baroosa, SA)

Tasting Notes:

A treasure to behold.

Colour:
Brooding deep rich red Purple with a dense black core

Nose:
Intense Red and Black summer berries laced with cherries over liquorice and cedar box with smoky yeasty undertones

Palate:
Initial black currants liquorice and an explosion of ripe raspberry ably supported by rich deep Satsuma plum brooding below.

The middle palate starts with Chocolate over cigar box that volatilizes cleanly to reveal deep yeasty black tea and shiitake mushrooms.

The Assertive acid and firm yet velvety tanning gives a palate that lingers on and on.

Bright hue; elegant, but complex, with distinct cool region overtones of spice and liquorice to the black fruits; the tannins and oak are well-balanced and integrated.

2009 Tatiarra Culled Barrell Shiraz (Heathcote, VIC)

Nosing reveals a delightful profile of ripe blackberry and liquorice followed by some vanillin oak, light mocha and spice. Bold and richly textured the palate is loaded with ripe blackberry and dark plum flavours followed by some liquorice and vanillin spice with a strong peppery back palate presence.

A dark garnet colour with vibrant hue. Rich, ripe aromas of blueberry and black tea framed by a bouquet of hazelnut, cocoa powder and brown sugar. Savour flavours of blackberry fruit and dark chocolate as this dense vintage evolves and opens up in the glass.

2011 Domaine Pierre Usseglio & Fils Chateauneuf-du-Pape (France)
One of the finest Tradition cuvees of the vintage. Its deep ruby/purple hue is followed by copious aromas of blueberries, mulberries, kirsch, lavender, pepper and Provencal herbs.

94 Points Wine Front: “Not exactly famous for Shiraz is Marlborough, and to be honest, I don’t even really like Shiraz that much, but this blew me away. Crack of pepper, meaty, juicy dark cherry fruit and subtle oak. Medium bodied, light chalkiness, supple, light herbal seasoning and pepper, but wrapped up in raspberry and cherry fruit.”

2009 Pierre Amadieu Vinsobres Les Piallats (France)

The nose displays aromas of dark ripe cherries, some meaty characters, a touch of liquorice and some spice. Medium to full bodied with flavours of dark raspberries, black cherries, some liquorice and meaty characters with a spicy back palate. Dryish slightly chewy tannins give the wine a slightly chalky mouthfeel.

2012 Lou Miranda Estate Shiraz (Barossa Valley)

A nose of lifted ripe raspberry fruit characters combined with varietal spice and hints of pepper are at the fore. The nose has a youthful aroma of red licorice and sweet toasty oak, which is integrated into the richness of the wine.

A warm, inviting and full-bodied palate, which is beautifully ripe & generous. It tastes of rich, sweet blackberry & raspberry fruits and the vanilla oak is complimentary to the chocolaty tannins.
